This recipe of Juicy Meatloaf is very traditional here in Minnesota. We are famous in this part of the country for serving this dish. It is comfort food, so together with Cheesy Potatoes you have a great meal for cold nights. And we do have plenty of those around here.
Besides the fact that it is considered comfort food, it is also very easy to put together. My friend Audrey, a true Midwest gal, gave me this recipe few years ago. I kept the recipe as a treasure from my good friend. Over the years, she shared with me many of her favorite recipes from Minnesota.
This meatloaf, in particular, is juicy, healthier than other recipes out there and delicious. And you need only about 10 minutes to put it together and an hour to bake it. How easy is that?
Mix brown sugar, ketchup and mustard and spread it over the meat.
Bake it for an hour at 350F.
Slice and serve cold or warm with mashed potatoes, vegetables, cheesy potatoes, or anything you like.
- 1 to 1 1/2 pounds ground beef
- 1 small onion chopped finely
- 1 egg
- 1 tsp salt
- pepper to taste
- 1/2 cup milk
- 1 cup oatmeal
- Sauce over the meatloaf:
- 3 tbsp brown sugar
- 1/4 cup ketchup
- 1 tsp mustard
- Preheat oven to 350F
- Stir above ingredients throughly.
- Add pepper to taste
- Last add the oatmeal.
- Put the mixture in greased loaf pan and spread with the sauce made out of brown sugar, ketchup and mustard.
- Bake 1 hour at 350F.
